Yeast is composed of cytoplasm that contains nutrients and umami flavor components, and cell walls that surround the cytoplasm like a shell. The cell walls contain high quantities of substances such as beta-glucans and mannan. Pure yeast cell wall extract is called brewing yeast cell walls.

Research background

The essential ingredients for brewing beer are water, malt, hops and beer yeast. Spent beer yeast removed after being used for brewing contains many of the nutrients derived from the wort. The Asahi Group was one of the first brewers to focus on the nutritional value of brewer’s yeast, and began researching effective uses for brewing byproducts.

Creating a society of health and abundance

Tests in mice have shown that brewing yeast cell walls could potentially raise levels of immunoglobulin A antibodies (which help fight viruses and other pathogens), and prevent drops in white blood cell counts (which play a key role in immunity). Tests in human subjects have also shown that brewer’s yeast cell walls reduce fatigue and boost levels of natural killer cells (a type of lymphocyte critical to the immune system). Studies have shown that declining immune function might come from a number of different causes such as aging, stress and fatigue. So by providing a more complete scientific description of the relationship between brewing yeast cell walls and immune function, Asahi will pave the way to more extensive use of brewing byproducts while helping promote and maintain human health.
