Beer yeast is a byproduct of beer brewing that contains 40 nutrients such as B vitamins, proteins, minerals, dietary fiber and nucleic acids. It also contains nine essential amino acids unable to be produced by the body. Dried yeast is made by drying yeast in a way that results in minimal damage to its abundant nutrients.

Research background

The essential ingredients for brewing beer are water, malt, hops and beer yeast. Spent beer yeast removed after being used for brewing contains many of the nutrients from the wort. The Asahi Group was one of the first brewers to focus on the nutritional value of brewer’s yeast, and began researching effective uses for brewing byproducts.

Creating a society of health and abundance

At Asahi Group, we have developed technologies to dry ‘beer yeast’, a by-product of beer brewing, without destroying its abundant nutrients as much as possible, and to remove the bitterness derived from hops attached to the yeast during the manufacturing process. In 1927, we established a technology to formulate ‘beer yeast (dried yeast)’. Since then, we have been expanding the utilization of beer manufacturing by-products by advancing research on the nutrition and functionality of ‘beer yeast’ and developing new materials by fractionating the components of ‘beer yeast’.
